peanut butter chocolate chip banana bread
This is one of my absolute favourite recipes. Banana bread has been a food I have loved since I was a little kid. Spending more time at home these last few months has allowed me more opportunities to bake and make foods that I love. This recipe is quite simple and easy to follow. I have given this recipe to friends who consider themselves beginner bakers and they have completed this with success. In case you needed some reassurance you can do this!
INGREDIENT LIST
1/2 cup unsalted butter at room temperature (soft, not liquid)
1 cup lightly packed dark brown sugar
1 large egg
1 teaspoon vanilla
1 cup natural peanut butter
1/3 cup sour cream
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup bittersweet chocolate chips
4 large extremely ripe bananas, chopped (optional: an extra banana for garnish)
INSTRUCTIONS
Preheat your oven to 350 degrees and grease a loaf pan with butter.
*Choose if you will use a stand mixer or a hand-held mixer*
Sift together your dry ingredients in a bowl first and set aside
In a bowl (or stand mixing bowl) cream the butter and sugar
Add one egg, vanilla, peanut butter, and sour cream. Blend well.
Add in your dry ingredients, 1/3 at a time
*Be mindful not to over mixFold in the bananas and chocolate chips and pour mixture into the prepared loaf pan
Garnish with banana if desired
Bake for 60-70 minutes, until a fork comes out
with crumbs but not wetLet cool slightly before serving.
Store in an airtight container on the counter for up to a week.
